How and when to prepare shulik?

Come nearer a light holiday of Makovey, and together with it warm memories of the childhood waken. In many places of Ukraine this day hostesses prepared shulik - one of favourite delicacies of children and adults too.

Makovey - Honey, Poppy, First Saviour - the national and orthodox holiday falling on August 14. It is the first day of the Dormition two-week Fast. “Saviour“ comes from the word to escape, that is to survive in days of a post, eating bread, honey, apples.

Long since at many people poppy was a symbol of fertility and a charm from evil spirit. In church bore makoveychik - bouquets from flowers and the ripened poppy heads. The consecrated poppy of mother was stored after images and when the daughter went to the altar, poured it to shoes.

Makovey in many regions of Ukraine was considered as a maiden and children`s holiday. Children this day it was exempted from work on economy and went to walk to the wood. Our ancestors believed that they for Honey Saviour of a plant became magic. If to them to handle wishes, then they by all means will come true. But under one condition: asking has to be pure soul, the child or the girl.

Also for this holiday of mother spun to children of a venochka from a thyme, calendulas, flax. Each plant carried out a charm role. Women spun venochka and kept saying:

Rosti, the lyena, vishche,

Where national traditions remained, on Makovy are baked by makanets, machnik - fast pies, rolls, rolls, gingerbreads. Began a festive meal with pancakes which were dipped in gravy from poppy and honey. This gravy was cooked in special pottery, in Russia she was called a makalnik, in Ukraine - makitry, in Belarus - a makater.

A traditional Ukrainian dish by this holiday are of a shulika - the fast cake layers broken on pieces which are filled in with poppy syrup. This dish could be eaten during all two-week post.

Recipes of preparation of shulik - a set. Each hostess has secrets. But the real shulik surely prepare from the fast test, not without reason spoke: “The woman of a shulika baked from water and flour“. Margarine, butter, eggs, sugar began to add it to dough for a sdobnost already today.

Some recipes of cake layers:

1. To take three glasses of flour, one glass of warm water, on a half of a teaspoon of salt, soda, lemon acid. To knead dough, to roll layers 1 - 1,5 cm thick, to plan a rombika knife, to pin a fork. To bake to a ruddy crust. It is possible to bake in an oven or on a frying pan. If to bake on a frying pan, it is necessary to overturn cake layers.

2. Two glasses of flour, four tablespoons of milk, one egg, one tablespoon of butter, one tablespoon of poppy, on a knife tip - soda.

3. Kefir or curdled milk - one glass, one egg, two tablespoons of sugar, salt, soda on a tip of a knife, about one and a half glasses of flour. To knead dough soft, as for pies. Ready cake layers to break

on pieces, to put in a bowl and to fill in with a poppy milk (gravy), to leave for half an hour for swelling.

For a sauce to take a glass of poppy, to fill in in a makitra with boiled water, to wrap up and leave at several o`clock. Then to merge water and to carefully grind poppy by means of a makogon, in the small portions adding water. For a good sauce of water has to be a little, the main flavoring element - the juice which is emitted from poppy when grinding. But also the small amount of water should not be taken - in that case shulik will be dryish. If poppy is pounded correctly, then weight will turn out white color. To add to the mass of 6 - 7 tablespoons of sugar. It is possible to add honey or sugar - as it will be pleasant to whom more.

If you have no makitra and a makogon, it is possible to use a porcelain mortar. Some hostesses pass the steamed-out poppy of 3 - 4 times via the meat grinder, and others - crush on the coffee grinder.

The poppy milk also is the main component of a traditional Christmas dish of a sochiv. For this purpose add the pounded walnuts to poppy gravy and fill in with it the welded wheat grains.
