Thanks to whom meat-eating became safe? Daniel Elmer Salmon of

my article about kashrut was reprinted by one Israeli Russian-speaking the Internet - the magazine. The public reading similar editions, competent and besides strongly angered on orthodox part of the Israeli society. So to the author (that is, me) got at full scale.

The main argument was that, as without observance of kashrut we are living - are healthy. From where a conclusion that kashrut - nonsense, a prejudice and attempt “religious“ to snatch the piece at law-abiding citizens followed. Really, obligatory control of a koshernost of production of all Israeli food industry (and not only food) increases the cost of this production at least for 10 percent. So Israel - quite expensive country. To tourists on a note!

the Thought that if kashrut exists several thousands of years, so was in it a certain vital need , did not reach my educated critics. Meanwhile about 150 years ago even very skeptical Jew in need of kashrut as measures hygienic, did not doubt. Meat those years was quite dangerous product. Together with a piece of pair cutting from the market it was possible to bring a dangerous illness which would deform all subsequent life not worse than an illness venereal. Therefore wealthy people preferred to keep, checked, the butcher. Exchanged addresses of butchers the same as now women exchange addresses of “the“ hairdressers and cosmetologists.

For the same reason supervision of the correct slaughter of cattle and quality control of the meat sold in the market long since was considered at governors as business by the major. All textbooks of journalism quote the ancient Roman inscription found by archeologists:

At Jews with quality control of food everything was as it should be thanks to kashrut which basic rules all members of a community knew. In difficult cases addressed experts. Such experts in each community always was, at least, two: the rabbi and a reznik (shokht). Reznik was very important figure. He not only slaughtered an animal in due form, but also made initial survey of meat and monitored observance of other rules of kashrut. Usually the position of a reznik passed from the father to the son. Therefore Rezniki, Reznitskiye, and also Shoykheta and Shokhata have the right to be proud. Several generations of their ancestors on the man`s line were people competent and honest. And besides with a strong hand in which the knife did not shiver.

Rules of kashrut reliably protected life of members of the community leading the life isolated from the surrounding people. Therefore I still am surprised to council of the apostle Pavel to Christians to refuse kashrut.

But we will return from hoary antiquity to times rather recent. When the countries of the American continent began to come out on top in the world on production and export of meat and when slaughters in Chicago gained the world fame.

The American journalist and the writer Upton Sinclair (1878-1968) decided to draw attention of readers to severe life of working Chicago slaughters. In 1909 he wrote and published the novel “Jungle“. The novel brought to E. Sinclair deserved glory and caused a big resonance. But, as the author sadly summarized, he marked at bourgeoisie heart, and got into a stomach. Americans learned that production of sausage on slaughters actually “waste-free“. The spoiled products repeatedly mill and add to forcemeat, increasing heat treatment time. However, it not always helped. Cases of poisoning with factory sausage were frequent.

His name is immortalized in the name of a being not so nice, of a bacterium of a salmonella , the activator of one of the most dangerous food infections, salmonellosis. Perish the thought from such glory which often falls to lot of physicians!

Interest in treatment of animals wakened at Daniel in the childhood. In 8 years he remained orphan and lived on a farm of the uncle. The boy helped the uncle with all affairs, and upon termination of school decided to be learned on the veterinarian in Cornell University. This university from the moment of the basis was known as “university of practical knowledge“. The master of philosophy it was impossible to become here, and the veterinarian here diplomaed - please. In 1872 D. Salmon begins the career of “aybolit“. At the same time the young man continued study. In 1876 he became the USA first doctor of veterinary science.

On the instructions of the U.S. Government D. Salmon studied diseases of animals, widespread in the southern states. In 1883 he organized veterinary department in the Ministry of Agriculture of the USA. The new division had a lot of work. Thanks to its activity eating of meat in the USA stopped being risky action.

And not only in the USA. D. Salmon from 1906 to 1911 worked in Uruguay where organized department of veterinary science at Montevideo university. Just at this time Uruguay adjusted export of meat to Europe. Thanks to the high standards of veterinary control established by D. Salmon in Uruguay later copied by Argentina, the South American meat was esteemed in Europe by a standard of food safety. Besides it was cheaper than local. So at the beginning of 20 - go centuries meat products became, at last, for most of Europeans ordinary food. Tasty and safe what in due time the apostle Pavel could only dream of.
