What is sausage? About a difficult situation and nostalgia of

This question was asked to me by the three-year-old daughter thirty years ago, having heard, probably, this word in a garden where often there is the main education of children. Having asked what is sausage, she put me in a difficult situation as I could not explain it. And to show too. In the area three meat-processing plants of federal submission at that time worked for us, but similar food in shops were not.

Earlier I showed to children what is a donut which often gave us at school for breakfast. For display I, having naturally cut off a top crust at long loaf and having chosen from it a core, put a jam spoon in the formed opening, and then stopped up all this with the chosen core. Having explained that really a product it is made of the test and cooks in oil the same as flat cakes.

I did not decide to answer in a similar way the question of sausages raised by the daughter, and just to tell that sausage is a small sausage, there would be insufficiently. It is useless to say to the child that sausage is the production of meat production thrust into a mutton gut which is made of the forcemeat of pork, beef and mutton mixed in different proportions with addition of spices.

Long time sausage was a criterion of social prosperity of the Soviet person and won first place in a consumer basket. Then the person capable to buy and eat sausage was considered not only socially provided, but also occupying the corresponding step on a social ladder. As at shapochny analysis “he does not deserve anything better“, and here - “on a rank and sausage“.

In the eightieth - the ninetieth years in the press often told about sausage trains when residents of the areas, neighboring to the capital, occupied the Moscow shops on days off. And Muscovites with firmness held at this time the fort, defending the privileges of the “monarchic people“ who are in more advantageous position than all other inhabitants of boundless open spaces of our homeland.

A similar image I also solved the problem, having ordered a “overseas“ food product to the companion sent to Moscow. It was difficult to call what it brought sausage in our habitual understanding as it was made not of beef to which we got used, and from pork. Nevertheless, two sausages brought from Moscow were welded and solemnly presented for tasting.

The daughter bit one of them, told that it is muck, and refused to eat. Perhaps, it somewhere tasted natural sausage, or it just was the whim of the child and though in soul I agreed with it, indignation was above all limits. As so, through all country carried this food product especially for you, and you it are do not want.

Remembering an old story with sausage now, I think that our children, using different “ersatzes“ and substitutes in food, do not know taste of natural food which were made in the country before reorganization. From the moment of this reorganization I could not buy any time to bank of condensed milk with those tastes which this product had before reorganization.

What now is on sale in shops cannot even be put close for comparison with condensed milk of production of the Soviet period. State standard specifications and technologies disappeared, and legislators adopt the laws regulating that milk is that product that the cow gives, and milk drink (who gives it, it is unknown) is not milk. It is unclear from what the consisting raw materials it is difficult to make qualitative food of it.

I cannot tell, it is good or it is bad that today`s children do not know true taste of products, practically all of them are now made with different additives. They will have no nostalgia. And I, for example, cannot forget tastes of stewed meat, condensed milk and other food which, working in a taiga, we took with ourselves boxes. The lunch in a route often consisted from banks of stewed meat and banks of condensed milk with a cup of tea.

Today, as well as in former times, sausage became a standard of a social measure of prosperity again for the needy population when it is considered that the person who does not have an opportunity to buy sausage is below the poverty line. The exception can be somewhere in the remote villages in which people still consume food of own production in the natural form without any foreign inclusions.

The world surrounding us changes. Also food which we consume, often they genetically modified change today. At their look there are different unappetizing associations - for example, at the sight of cheese for sandwiches in the form of the thin leaves wrapped in polyethylene the same pack from sausage sheets is represented or sausage - all the same they of paper are done.

Perhaps, soon and will be - tore off a leaflet and ate sausage. I am that a vegetarian and for a long time I do without sausage. But, remembering an old case with the daughter, as well as thirty years ago, would find it difficult to answer now precisely a question what is sausage.

Because this food product in a modern look often consists of a food cardboard, some additives and still something unknown, similar to meat.
