What do we know about tequila? In days of old about exotic drinks and products the most part of the population of the country could read
only in novels or scientifically - popular magazines. Now all “overseas“ miracles are available in a usual supermarket. I am absolutely indifferent to alcohol, but at the holiday table at friends tried tequila . Curiosity got the best of tastes and habits.
By the way, in each country the drinks reflecting national originality and culture are made. Over time they become the symbols connected with history, traditions, myths and legends. But today we speak about tequila.
Among my acquaintances many consider it as drink from a cactus. It`s not true. Tequila is done of an agave - a perennial plant from family lileyny.
The agave for Mexico was always the sacred material “for life“. The documents which are written down on paper from its fibers are still stored in the national museum of the country. Did ropes of an agave, sewed clothes and footwear. Roofs of houses covered big leaves, and sharp needles used as nails. Juice a miracle - plants used in medicine. To them escaped from stings of venomous snakes and insects. It was initially external application.
And only in the 8th century AD the first drink from an agave - to a pool , made of the fermented plant juice appeared. Drink was read as magic, and long time it was available only to an exclusive caste of priests, leaders of the tribe and aged men.
Became a pool a tequila prototype. Then it was viscous, a little foamy drink of dairy color, with a strength of 4 - 6 degrees.
“The road to life“ of future symbol of the Mexican people was opened for the first time by conquistadors - the Spanish conquerors. They “overtook“ to a pool in stronger drink, using for these purposes the European technologies for alcohol distillation. From what it turned out mescal, with degrees is higher.
War for independence with the United States (19th century) gave rise to the Golden Age for tequila.
In 1873 in the small Mexican town Tequila industrial production of drink mescal began. And in 1910 at an exhibition in Texas it it is deserved received own name - “Tequila Wine“. And for a long time this tequila traveled around the planet, winning recognition not only Americans, but also residents of the European countries while in 1977 the final version of the law regulating its production was not accepted. Now there is an official document - the quality symbol reflecting all requirements to production of tequila, including not only geographical boundaries of the territory for cultivation of an agave, but even climate and temperature characteristics of this region.
By the way, in Mexico there are more than 136 types of an agave from which it is possible to receive drinks with “degrees“. However only one look - a blue agave suits for production of tequila . She externally differs from other plants and in a form reminds a big rose bluish or zelenovato - gray color. The plant fleshy, high, with rigid leaves and thorns, grows only in the State of Jalisco (the area Tequila) on the special sandy soil. Fields are at the height of 1500 m above sea level. Also patient leaving (not less than 8 years) that the plant reached the necessary stage is required. However the agave can grow till 12 years before its core rich with carbohydrates becomes ready for collecting. Here everything is simple: the more mature agave, the better it natural sugar.
What there is a tequila and what needs to be known at its choice?
Tequila Blanco/Silver - the purest. Young, fresh and invigorating. It is considered “unrestrained“ because at once spreads in bottles.
Tequila Joven/Gold - the same purest Blanco tequila, but with small addition of caramel.
Tequila Reposado, Anejo (100% of an agave) - age, more valuable tequilas. Reposado is maintained from 2 to 11 months, and Anejo from 12 months to 10 years.
Esperanto Karat - is among the most interesting and unfamiliar. Its production requires a blue agave 10 years which core gathers manually are more senior.
The real tequila - the same, as the present Tokay, sparkling or cognac. Therefore only that drink which is made directly in Mexico can be called tequila and has the inscription “Hecho en Mexico“ (“She is born in Mexico“). In 1996 EEC officially recognized it as the Mexican national krepkoalkogolny drink (fortress makes 38 - 40 degrees).
How it is correct to drink tequila? Initially Mexicans advised to drink tequila small shot glasses and not to mix with anything it. Other tasters suggest to drink it only from glasses with the made narrower top.
