Who thought up stuffed cabbage?

Stuffed cabbage - a thing simple. Scrolled meat in the meat grinder, welded grain, wrapped the received forcemeat in a cabbage leaf - and burst on health! But history of emergence of stuffed cabbage is difficult and confused.

From where this name undertook? Earlier, in times ancient, the word “stuffed cabbage“ had values, far from cookery, in Russian. Stuffed cabbage called or a timbered structure with a duo-pitch roof and a cross on it, or actually wooden cross with duo-pitch krovelky, established on a grave, or - here mysterious Russian soul! - Russian national dancing.

But we will return to stuffed cabbage edible. It is considered that the name appeared enough recently, in 18 - 19 centuries. During this period French cuisine exerts a great influence on Russia. In particular, there is popular a pigeons dish, entirely fried on a lattice. The dish was called artlessly - “pigeons“. As if in too time began to fry “false pigeons“ - the cabbage leaves filled with mincemeat.

But not everything is so simple. And how dumplings? The meat with a pshenka wrapped in cabbage sheets? At Pyotr still was! The expert on Russian Vladimir Dahl in the dictionary between galusha and stuffed cabbage puts a sign equality. And French not only pigeons, but also quails fried, and the dish had a name krepint.

The origin the word “stuffed cabbage“ from German “Kohlblatt“ - “a cabbage leaf“ - was rejected still by authors of dictionaries in a century before last. Will suit Serbo-Croatian to a goal ̀ rather; bi ħ that is trickled pastries.

Everything sharply becomes complicated if to remember about the Turkish sarma. Which is in turn close to dolma - the filled meat and rice to grape leaves. Wikipedia believes Turkey the most probable homeland of stuffed cabbage. Only, having left the Islamic country, stuffed cabbage very much changed: instead of grape leaves cabbage, instead of mutton pork, instead of rice buckwheat.

There is stuffed cabbage and Greece. In modern Greek they are artlessly called “cabbage dolma“ as if confirming the right of the invention of a dish with Turks. But Greeks (the truth not modern, but ancient) can be considered as full inventors of stuffed cabbage. The first mention of them sounded in Aristophanes`s comedy (the creator of a genre, by the way!) where one of heroes exclaims: “Bring me cabbage leaves with pork!“ Work is dated 425 B.C.

Alas, and Greeks not the first. Everything becomes and became in China! Residents of Celestial Empire will tell you a story about the clumsy scientist who fell down to the river 2000 years ago. Predatory fishes were found in the river, and pupils were afraid that they will eat the teacher. Then bright young men wrapped rice in cabbage sheets and threw into water. And one “student“ decided to try a new dish and very much highly appreciated its taste. Considering that if to wrap up a rice lump a thin strip from a cabbage leaf across, then there will be an ancestor of sushi (or sushi?) leaves that sushi and stuffed cabbage - practically relatives.

It turns out that during different eras on different continents the simple culinary decision appeared: to turn in a big leaf or to push in vegetable of a little boiled grain and chopped (after processed) meat. Called it on a miscellaneous, and the essence was one.

But there is more to come! You know that leaves of a nettle or horse-radish allow to keep meat fresh two - three days even in the summer? Our cave ancestors quite could use big leaves of plants for the purpose of preservation of the remains of food.

And prehistoric stuffed cabbage could arise not as food and as pass - refrigerators!
